for potato mixture :
boil 300g of potato ( peel& diced) for about 15 - 20 minutes. check by poking with fork
once its cooked, place it in a bowl and let it cool before you mash.
mash the potatoes until smooth ( but no need to be perfect, a few chunks is normal! )
add in about 25g - 30g cornstarch, salt ( i added garlic powder too. alot of people add sugar but i forgot )
mix until well combine and you can roll them into 6 potato balls.
for the cheese :
you can use any form of mozzarella cheese ( shredded, block, string, etc… )
each pancake gets about 1 tbsp of cheese.
create a small pocket in the potato ball and fill it with cheese.
close it up any way you can, just make sure the cheese is sealed!
for the cooking :
shallow fry them on low in a non-stick pan with enough oil to cover the entire surface of pan.
fry each side for 4 - 5 minutes.
enjoy them warm not hot or you will burn your fingers &mouth like i did.
for the bear :
you want 1 tsp of dough for the ears.
the ears won’t stick well to the dough but just add it in the pan. once the cornstarch starts to cook it will help them stick together.
cut tiny circles for eyes and nose.
for the snout, use a piping tip to cut a circle from cheese. place the seaweed nose on top.
